i ain't Irish...

...but Irish soda bread has been THE snack of the day.

a coworker, who is Irish and celebrates St. Patty's Day, brought in his homemade Irish soda bread. and he's so incredibly thoughtful and sweet that he even made a separate vegan Irish soda bread loaf for me!!!

let me tell you how that loaf of bread hit all kinds of good spots with me. and he brought in a jar of strawberry preserves as a topping. heat the bread for a few seconds in the microwave, top it with some non-dairy "butter" (of which he brought some just for me! i love him...) and spread on the preserves - had me praising God i tell ya! yes, Jesus.... loves..... me.....*drool*

i wish i could make this stuff at home. i've tried my hand at bread-baking in the past and well...it wasn't fit for human consumption.

i gotta get me some Irish people in my family who can make me this bread every week.
