more vegan stuff

this was dinner last night (and will be tonight and probably tomorrow night also - quite a pan full).


doesn't it look yummy? 'twas yummy indeed!!

and it was easy -

broccoli
tofu
zucchini
baby carrots
mushrooms
onions
green peppers
garlic cloves (crushed)

much like life, when it comes to veggies, the more colors you have, the better :-)

- all stir-fried in a little olive oil and wee bit o' balsamic vinegar (added vinegar almost towards end of cooking). because of different textures of veggies, i toss in ingredients at different times. but that may depend on your personal tastes also (i.e. i like my broccoli barely past raw - must be super crunchy for me! so i toss that in last and only cook for a minute or 2).

i also threw in a handful of fresh spinach (not shown - i put that in after the photo was taken), plus a few sprinkles of ground flax seeds (also not shown) for extra nutrient boost. added turmeric, cumin and cayenne for seasoning, but that was just because i was in the mood for those flavors, and those are a few of my fave spices. with veggies, you can almost never go wrong with seasonings, so be creative!

i also drizzled just a little walnut oil over the veggies after i turned off the flame (you don't want to cook with walnut oil - it has a low smoking point and will break down quickly. it's best used after cooking, or over cold foods like salads, etc.).

these veggies would be great served over wild rice or brown rice, but i just ate them by themselves last night (was making tea biscuits later and didn't want the extra calories of rice, plus was too lazy to wait for wild rice to cook - it takes a long time).
